Cranberries: the New Comfort Food

Ok, all y'all Gentle Readers, I'm going to share with you the New Comfort Food that will take you through the holidays and beyond...

This recipe comes from my dear friend and Reader, Michelle.

It is delicious.

It is nutritious.

It is easy.

Trifecta achieved!


Behold: Roasted Sweet Potatoes, Apples and Cranberries

You will need:

6 medium sweet potatoes, peeled and chopped (If you don't want to chop and peel, you can buy a container of pre-peeled and chopped butternut squash - no one will judge you, and it will taste wonderful)

2-3 Granny Smith apples, chopped

1/2 cup dried cranberries, OR a bag of fresh cranberries (go with the latter choice - you will not regret it!)

1/2 cup brown sugar (I prefer the dark)

3 Tbl melted butter

1/2 tsp cinnamon


Spread out 2 sheets of foil on a baking sheet perpendicular to each other, forming a cross of sorts

Place all the fruit and veggies in the center.

Sprinkle with brown sugar and cinnamon. Drizzle on the melted butter.

Fold over the sides of the foil, forming a sort of packet.

Roast at 450 for 30-35 minutes




The apples and cranberries with carmelize beautifully. And it looks so festive and pretty when you serve it up in a bowl or on a platter.

And the leftovers just continue to get better!


It's enough to make me back another turkey. And, it's hardy enough if you want a vegetarian meal. Truly, there is no downside to this flavorful delight.
