A Corona Treat!

Greetings, Gentle Readers,

I know many of you have been baking up a storm this spring/plague season. I, myself, made some Speculoos Brownies earlier this week, and, yes, they are fabulous! But at some point we need to take a break and enjoy a treat that is lower in calories.

Voila! Soft Serve Banana Ice Cream + Variations!


2 bananas

optional ingredients: peanut butter, almond butter, chocolate chips, maple syrup, nuts, vanilla, cinnamon, etc.

Special optional ingredients: frozen pineapple and pineapple juice

So, my cousin, Rae, sent me this recipe for Healthy Soft Serve Ice Cream:

Take 2 frozen bananas and throw them in the food processor. Whip 'em up and then add mixings of your choice.

Y'all, the reaction to these instructions is a violent one. I thought I had broken my food processor. But she is a badass and should not be underestimated.

When little banana pebbles form, stop the food processor and scrape down the sides. Then turn it back on. Around Minute 2, you will suddenly have frozen creaminess. At this point, add what'ere you like.

Disney has made their Dole Whip recipe available. I commandeered this recipe and fashioned it to my frozen banana goodness. When your frozen bananas are smooth and creamy, add a cup of frozen pineapple and 3-4 oz. of pineapple juice.

Now, you may be thinking, "But I don't have a food processor, and I'm concerned that this many frozen bananas could break my blender."

Here we go to B&V Science Correspondent and my friend, Michelle. Michelle had seen the same recipe I had, but decided that she would not freeze the bananas first. I follow all recipe rules; Michelle is a culinary rebel. We decided to rename our kitchen inclinations and say that we were making the same dish differently FOR SCIENCE!

Michelle whipped up her room temperature bananas in the blender and then froze the creaminess in a container with a lid. She waited 24 hours and then thawed the frozen soft serve bananas on the counter. The result was icy and not yummy. But, BUT, she then transferred the slightly thawed icy bananas to the blender, added some nut butter and whipped it up, and it was delish!

So, 2 variations on the how-to, 1 frozen delight any way you freeze it.


When was the last time I wore lipstick? I don't even know where it is anymore!
