I'm one of THOSE people now…I took a picture of a salad

I can't believe it. Last night I found myself.....taking a picture of a freakin' salad. I always mocked those whose Facebook feeds were populated with their daily meals. I wondered at the mavens of Pinterest who seemed to have time to document every picturesque arrangement of greens. Who are these people, I asked myself? And do they have lives? And then I did this.

I guess I'm a little ashamed, but you guys, this is a really good salad.

It started when (admittedly, inspired by a recipe on Pinterest), I decided to make an interesting new salad for dinner. The recipe I had pinned involved such apparently-out-of-season items as pears (pears? why are there no pears?), exotic ingredients like pomegranite seeds (hard to find at a regular grocery store, not to mention messy and time-consuming) and something called pepita seeds, which I have never even seen or heard of. No. I was going to have to make up my own fancy salad.

The result is a kale salad with Pink Lady apple pieces, dried cranberries, diced white onion and shelled pistachio nuts, dressed with a homemade balsalmic vinaigrette. All ingredients found at my local H.E.B., thank you very much.

Salad:

  • 2 approximate fistfulls of shredded kale (remove those horrid stalks)

  • 1 half to 1 whole apple, sliced into bite-sized pieces. I used an organic Pink Lady apple, and those are huge, so I only needed a half.

  • 1 loose handfull of dried cranberries

  • 1 loose handfull of shelled pistachios (found in the bulk section)

  • 1/4 large white onion, finely diced

The dressing recipe I got from my sister, but it didn't taste like hers and I ended up altering it a bit, to make it less oily. I generally find vinaigrettes to be too oily, but if you're not like me, you can leave out the water and lemon juice and double the olive oil - your choice.

Dressing:

  • 1/4 cup of olive oil

  • 4 1/2 tablespoons of balsalmic vinegar

  • 3 tablespoons water

  • 1 tablespoon brown mustard

  • 1 1/2 tablespoon honey

  • 1 tablespoon brown sugar

  • 1/2 teaspoon minced garlic

  • 1 teaspoon lemon juice

  • Salt and pepper to taste
